MP3 is the format every phone, car and app plays. It's lossy: it drops the sounds people hear least to keep files small.
AAC is the audio codec inside M4A and MP4 files, here as a raw .aac file. It sounds good at small sizes, but some apps only open it wrapped as M4A.
Both are compressed formats, so converting re-encodes the sound once. At a good bitrate the difference is hard to hear.
